Onion Cheddar Soup - (Winner)

      1 c  Chopped onion
    1/4 c  Butter or margarine
    1/4 c  All-purpose flour
    1/2 ts Salt
      1 ds Pepper
      4 c  Low fat milk
      2 c  Shredded sharp cheddar process cheese

Cook onion in butter until tender, but not brown. Blend in flour, salt and pepper. Add milk all at once. Bring to a boil, stirrlng constantly. Remove from heat and add shredded cheese, stirring until melted. Garnish each serving with paprika and snipped chives. Makes 6
