Onion Relish

      2 lb Sweet onions, lg. -chopped
      2    Celery stalks -sliced
      1    Sweet red pepper -chopped
      1 tb Butter -melted
    3/4 c  Vinegar, cider
    1/4 c  -water
      2 tb Brown sugar
      1 ts Celery seeds
    1/4 ts Salt

Saute cnion, celery, and red pepper in butter in a small Dutch oven 1 minutes or until tender. Add vinegar and remaining ingredients. Bring boil; reduce heat, and simmer, uncovered, 20 minutes. Store in refrigerator. Serve chilled or at room temperature. Yield: 1-quart
