Onion Pie

    1/2 lb Onion; thinly sliced(about 2
      2 tb Butter
      8 ea Eggs
      1 c  Dry white wine
    2/3 c  Heavy cream
      1 ts Salt,
    1/8 ts Pepper
    1/8 ts Nutmeg
    1/2 lb Grated Gruyere cheese; (abou
      1 ea 9"pie crust

Saute in butter till soft, remove from heat & set aside. Combine eggs, wine, cream, salt, pepper & nutmeg. Spread 1 cup of cheese on bottom of pastry shell, cover with onions and top with remaining cheese. Pour cream mixture over cheese and onions. Bake 350 for 1 hour or until knife >> inserted in center comes out clean. Serve chilled.
