Onion Marmalade II

      4    Red onions (~1.5 lb)
      2 tb Butter
      2 tb Red wine vinegar
      2 tb Honey

Cut onions crosswise in half, those into quarters, those into cubes. Heat butter in a heavy saucepan, add onions, cover, cook medium high ~15 min until they start to brown, stirring occasionally. Uncover, add vinegar, cook briefly until almost evaporated, then stir in honey. Cover tightly, cook 10 min.


Yield: 1 Servings
