1 c Butter, softened
1 c Sugar
1 c Powdered sugar
1 c Vegetable oil
1 tb White vanilla extract
3 Eggs, well beaten
4 c Flour
1 ts Baking soda
1 ts Cream of tartar
1 ts Salt, optionalCream together the butter and sugars. Add oil and mix well, add vanilla and eggs and mix well again. Stir together the flour, salt, baking soda and cream of tartar. Add flour mix to butter mix. Stir well. Place dough in refrigerator for at least two hours. Roll dough into balls about the size of walnuts. Roll the balls in sugar. Place on ungreased cookie sheets about 1 1/2 inches apart. flatten balls slightly. Bake at 350 deg f for 10 to 12 minutes. Remove from baking sheets immediately and place on wire racks to cool. These cookies are very tender and will break easily. Makes about 3 to 4 dozen.
