Old-Fashioned Pole Beans

      3 lb Pole beans; fresh
      5 c  Water
      1    Ham hock; 1/2 lb.
      2 ts Salt
    1/4 ts Pepper

Remove strings from beans, cutting beans into 2 inch pieces. Wash beans. Place water and ham hock in a Dutch oven; bring to a boil. Reduce heat; cover and simmer 1 hour. Add beans, salt, and pepper; cook 30 minutes or until tender.


Yield: 10 Servings
